Anxi Xiang Tie Guan Yin (安溪香铁观音)

Anxi Xiang Tie Guan Yin is a variety of Tie Guan Yin oolong tea from Anxi County, Fujian, China. The term “Xiang” (香) means fragrant, indicating that this tea has a stronger aroma compared to traditional roasted Tie Guan Yin. It is a lightly oxidized and lightly roasted tea, known for its refreshing floral fragrance and smooth taste.


Characteristics of Anxi Xiang Tie Guan Yin

  • Appearance: Tightly rolled, jade-green tea leaves with a glossy surface.
  • Aroma: Pronounced floral scent, often compared to orchids or osmanthus.
  • Tea Liquor: Bright golden-green, clear, and luminous.
  • Taste: Smooth, fresh, and slightly sweet with a lingering floral aftertaste.
  • Mouthfeel: Light-bodied, silky, with a refreshing cooling sensation.

Brewing Instructions

Gongfu Style (Traditional Method for Best Flavor)

  1. Teaware: Use a gaiwan (100-150ml) or a small Yixing clay teapot.
  2. Tea Amount: 6-8g (about 1/3 of a gaiwan).
  3. Water Temperature: 90-95°C (194-203°F).
  4. Steeping Times:
    • First rinse: Quickly rinse the leaves with hot water and discard.
    • 1st infusion: 10-15 seconds (delicate floral notes).
    • 2nd-4th infusions: 15-20 seconds (richest aroma and taste).
    • 5th-7th infusions: 25-30 seconds (mellow and sweet).
    • 8th+ infusions: Gradually increase time by 5-10 seconds until the flavor fades.

Western Brewing (Simpler & Milder Flavor)

  1. Teapot or Mug: Use a 300-500ml teapot or infuser mug.
  2. Tea Amount: 3-5g (1 teaspoon).
  3. Water Temperature: 90°C (194°F).
  4. Steeping Time:
    • 1st infusion: 2-3 minutes.
    • 2nd infusion: 3-4 minutes.
    • 3rd infusion: 4-5 minutes.
