West Lake Long Jing (西湖龙井, Xīhú Lóngjǐng)

West Lake Long Jing (西湖龙井, Xīhú Lóngjǐng) is one of China’s most famous green teas, originating from the West Lake (Xīhú) region in Hangzhou, Zhejiang Province. It is renowned for its flat, jade-green leaves, fresh aroma, and sweet, chestnut-like flavor.

True Xihu Longjing comes from designated regions around West Lake, including Shi Feng (狮峰), Longjing (龙井), Mei Jia Wu (梅家坞), and Weng Jia Shan (翁家山), and is considered the highest quality Longjing tea.


Characteristics of West Lake Dragon Well

  • Appearance: Flat, smooth, emerald-green leaves pressed into a spear-like shape.
  • Aroma: Fresh, floral, and slightly nutty.
  • Tea Liquor: Pale golden-green.
  • Taste:
    • Sweet, mellow, and refreshing, with notes of chestnut, orchids, and a hint of fresh grass.
    • Smooth, with little bitterness or astringency when brewed properly.
  • Mouthfeel: Soft, silky, and clean with a lingering sweetness.

Brewing Instructions

Gongfu Style (For Maximum Flavor Expression)

  1. Teaware: Gaiwan or glass cup (100-150ml).
  2. Tea Amount: 3-5g (about 1 teaspoon).
  3. Water Temperature: 80-85°C (176-185°F) (avoid boiling water to prevent bitterness).
  4. Steeping Times:
    • 1st infusion: 15-20 seconds (light and sweet).
    • 2nd-4th infusions: 20-30 seconds (nutty and floral notes intensify).
    • 5th+ infusions: Increase by 10 seconds each time.

Western Brewing (Simpler, Milder Flavor)

  1. Teapot or Mug: Use a 250-500ml glass or porcelain teapot/mug.
  2. Tea Amount: 3g (about 1 teaspoon).
  3. Water Temperature: 80-85°C (176-185°F).
  4. Steeping Time:
    • 1st infusion: 1-2 minutes.
    • 2nd infusion: 2-3 minutes.
    • 3rd infusion: 3-4 minutes.

Serving Tips

  • Glass Brewing Method: Add tea leaves first, pour water gently, and enjoy watching the leaves gracefully float and sink.
  • No Milk or Sugar: Best enjoyed plain to appreciate its delicate flavors.
  • Cold Brew Option: Steep in cold water for 6-8 hours for a naturally sweet, refreshing tea.
  • Pairing: Complements light snacks, seafood, and mild desserts.
