White Peony White Tea – Old Bush (白牡丹老树白茶)

White Peony White Tea – Old Bush (白牡丹老树白茶, Bái Mǔdān Lǎo Shù Bái Chá) is a premium white tea from Fuding, Fujian Province, China, made from mature tea trees (old bush/老树). These older bushes produce leaves with deeper, richer flavors and greater aging potential. White Peony (Bai Mudan) is a step above Shou Mei in terms of quality, containing both silvery buds and young leaves, resulting in a perfect balance of sweetness, floral notes, and complexity.

This tea is naturally sun-dried, retaining its delicate aroma and improving over time as it develops more honeyed and woody flavors.


Characteristics of White Peony – Old Bush

  • Appearance: Silvery buds mixed with tender, green-brown leaves.
  • Aroma: Floral, fresh, with hints of honey and dried fruit.
  • Tea Liquor: Pale golden to light amber, deepening with age.
  • Taste: Smooth, well-balanced, with notes of orchids, honey, and dried apricot.
  • Mouthfeel: Soft, silky, and refreshing with a lingering sweetness.

Brewing Instructions

Gongfu Style (Traditional Method for Full Flavor)

  1. Teaware: Use a gaiwan (100-150ml) or a glass teapot.
  2. Tea Amount: 5-6g (about 1/3 of a gaiwan).
  3. Water Temperature: 85-90°C (185-194°F) (avoid boiling water to protect delicate flavors).
  4. Steeping Times:
    • 1st infusion: 15-20 seconds (gentle and sweet).
    • 2nd-4th infusions: 20-30 seconds (floral and fruity notes shine).
    • 5th+ infusions: Increase by 10 seconds each time.

Western Brewing (Easier & Milder Flavor)

  1. Teapot or Mug: Use a 250-500ml teapot or infuser mug.
  2. Tea Amount: 3-5g (1 teaspoon).
  3. Water Temperature: 85-90°C (185-194°F).
  4. Steeping Time:
    • 1st infusion: 2-3 minutes.
    • 2nd infusion: 3-4 minutes.
    • 3rd infusion: 4-5 minutes.
